Healthy Recipe Linkup!

Do not be alarmed - I am not turning Cardigan Junkie into a cooking blog.  I lack the skills.  However, my friend Danielle over at Elleinadspir is hosting a linkup party today and everyone involved is posting a healthy recipe.  Since I'm about a month into my new fitness regime (5 lbs down!) I've been eating better and wanted to share a really good, easy recipe that my sister taught me:

Zucchini Fries

- 2 large zucchini
- 3/4 cup Italian seasoned bread crumbs
- 1/4 cup parmesan cheese (like for pizza)
- 1 egg with a splash of milk (egg wash)

1. Preheat oven to 425, spray a cookie sheet with nonstick spray

2. Slice zucchini into long french fry-esque pieces

2. Mix bread crumbs and parmesan cheese in a small bowl and create a small bowl of egg wash

3. Dip zucchini pieces in the egg wash and then roll them into the crumb mixture

4. Arrange slices on the cookie sheet and bake for 20 minutes, turning them over halfway through

These are really great right out of the oven when they're crispy.  However, don't make more than you'll eat because they do not do reheat well the next day.  Enjoy!

  2. These sound really good. Apparently butternut squash fries are pretty good too. I plan to try them out this summer.

    I also wanted to tell you that the upholsterer I use is Berkeley Fabrics on Midway Road in Addison (basically at Midway & Beltline). The lady's name is "New." Tell her you're a friend of Annie Salem & hopefully she'll hook you up with a good deal. They've recovered everything of my family's for years and years! xo

  12. This is totally after the fact, but I just came across this recipe (that I had printed) and I realized I never came back and told you how good they were! Just got more zucchini, and will definitely make again. :)
